15 Fall Meals To Make This Season



Ready or not, the weather has turned and all of a sudden Fall is here. To be honest I was enjoying our warmer weather, it allowed us to enjoy our neighborhood and outdoor space so much easier but we do plan on preparing the deck and keeping up with our outdoor playdates/entertaining. More on how we'll be doing that later, for now lets talk foods.


Do you feel your meals change as the weather changes? We move toward slow cooking, roasting and instant potting so many more dishes here. More soups than salads and just heartier foods. Which are actually so much easier for me. You know the whole set it and let it go? Here are 15 meals I am making this season that you can make too!


1. Instant Pot Mongolian Beef, I have not made this in ages but its SO good and easy. ( meal prep tips in this post are really great for those of you in busier seasons!)


2. I love a roasted chicken, throw in a bunch of roasted veggies, some sweet potatoes and its perfect easy (can be one pant) dinner. If your smart you roast two chickens and shred one for tacos, and use all the bones for a bone broth!


3. I made these wings the other night for Monday night football but also because the girls love them and will gobble them up! I like to make with white rice or roasted potato wedges and avocado, carrot and cucumber salad (make sure and decrease the amount of spice when serving to kiddos).


4. Instant Pot Arroz Con Pollo, I made this on the stove top the other day and reminded how easy and yummy it is.


5. This flavorful Instant Pot Indian Soup is a family favorite. So good, so easy and better as leftovers!


6. This red wine ragu pasta is on my MUST make, oh man it looks delish.


7. Roasted veggie bowls like these on some barley or brown rice are so easy to make ahead for a dinner and a couple lunches, and the best part is you can really play around with these, I sometimes add salmon or steak, or just throw in a whole sheet pan of different veggies. Make a couple different dressings, and then set it all out for your family to build there own bowl!


8. One Pan Pork Chops With Apples, if O isn't home I always make something I know he won't eat like pork and this one is a fun twist!


9. Quinoa Stuffed Squash is that meal that you can easily serve at a dinner party but also a weeknight dinner! So good, feels so special and so so so good.


10. Turkey Pumpkin Bean Chili any chili works for us, especially served with a bowl of tortilla chips for scooping! This one with pumpkin sounds like a fun Fall twist!


11. We make a couple white bean soups a month, Ami's favorite and I serve with white rice for Zoe who isn't a huge fan of soup right now. This one with bacon may change her mind though.


12. Instant Pot Zuppa Toscana, looks soooo good. Make on the weekend and have for lunches + 1 dinner during the week!


13. Baked Honey Cilantro Salmon is on the menu for next week. The girls and I could eat salmon every night!


14. Slow Cooker Balsamic Glaze is something I have not made in years and I now have it on the menu for this month.


15. I have some squash in the freezer from the farm and I want to try this with it! We are trying to have a few vegetarian meals a week and this looks like a yummy way to do it.

I hope that these dishes help take one thing off of your plate! I know that for me having a nice list of meals each season that I can choose from when meal planning really helps!
