Hey hey it's Friday my loves!!
Which means two things, 1- we survived. 2- the weekend is here!
A lot of you have asked for healthy snack and meal ideas that your whole family will like and I'm listening I promise. With some crazy busy weeks behind me (and a cooking rut!) I am finally back in the kitchen, creating recipes and photographing tried and true favorites. Like this chi chi chia pumpkin bread. I use to make a version of this weekly. Sometimes as a loaf and sometimes as muffins. With shaved dark chocolate or bananas instead of pumpkin, and always delish.
The girls and I have been a yummy pumpkin loaf from Starbucks every time we head to the city for an appointment, so in consideration to the budget anddddd to keep it healthier I decided it was time to bring back an old favorite.
And making it before the weekend makes for a yummy weekend treat too.
Ingredients 1 ½ cup flour 2 tsps. baking powder ¼ tsp. salt 1 large egg (room temperature) 4 tbsps. whipped butter, softened 1/2 cup maple syrup (you can use can sugar or maple sugar here! ) 1/3 cup chia seeds
1/3 cup milled brown flax seed 1 can pumpkin puree ½ cup milk (you can use almond or a dairy free alternative here)
1 tbsp cinnamon
1 tsp nutmeg
1 tsp ground cloves (we love but can be skipped, ginger would be awesome here too)
Recipe
Preheat oven to 400 degrees and grease a medium loaf pan and set aside.
In a large bowl mix butter, egg, banana and sugar.
In a medium bowl add flour, flax seed, salt, baking powder, cinnamon, nutmeg, cloves and mix until combined.
Slowly add flour mixture and milk to wet ingredients, alternating until incorporated. Fold in chia seeds.
Place batter in loaf pan and place in the oven for 45-60 minutes or until a tooth pick inserted in the middle comes out clean. (the time will depend on your oven so make sure and check that it doesn't over cook)
You can add more maple syrup if you prefer it on the sweeter side but the girls are use to this and we serve it with this yummy vanilla ghee and berries so it's perfect.
